Due to the recent increase in single-person households, the production of processed meat extractions that can be easily cooked and consumed is steadily increasing.

Meat extraction products are extracted with meat as the main ingredient or processed by adding food or food additives, such as gomtang and samgyetang.

Production performance of processed meat extraction products increased to 164,000 tons in 2022, 174,000 tons in 2023, and 197,000 tons in 2024. On the other hand, the nonconformity rate was about 2.8% over the past three years (from 2023 to April 2025), more than five times higher than the overall nonconformity rate of 0.5% of processed meat products, and the main cause of nonconformity was found to be excessive detection of E. coli and bacteria due to insufficient heat treatment and poor sealing packaging, requiring systematic safety management.

In this regard, the Ministry of Food and Drug Safety will distribute guidelines for the safety of gomtang and samgyetang microorganisms that manufacturers of meat extraction products such as gomtang and samgyetang, which are widely consumed as home food, should follow.
