On the 14th, Ahn Sung-jae's YouTube channel posted a video titled 'New Parasite Seoul's Crazy Details for the First Time'.
The video showed the preparation for the re-opening of the Michelin 3 star 'Massou Seoul'. A month after the re-opening, Ahn Sung-jae said "I thought I would get used to it, but I still say I feel like I've been fighting a war. I don't know what's going to happen, so I feel like I'm walking on the ice that keeps sweating in my hands. "But it's not a negative feeling. I think everything is more wrong if you feel perfect and comfortable. We're on our way because we've re-opened to do something new" he said.
Forty days before the re-opening, Ahn Sung-jae visited the construction site in person and revealed the interior points. What Anseongjae values is the landscape of the yard and the realization of a different atmosphere on each floor. Ahn Sung-jae spurred preparations for the opening through endless meetings with employees.
Staff meals were also revealed. During the short 30-minute lunch break, each employee ate as much food as they wanted. Chef R&D "Staff density is very important. One person is responsible and the other colleague supports and prepares it. "I'm the youngest, but I do it responsibly as a chef for that day," he said.

In a video with chef Kim Jin-hyuk, Ahn Sung-jae mentioned this. Ahn Sung-jae says "I choose the best staff meal once a month. The person who makes the best staff meal is given about 100,000 won. The kids think more about me because I'm giving them a prize for the most memorable and delicious food. There needs to be motivation."
Ahn Sung-jae said, `If kimchi is the most delicious and memorable, we give a prize for kimchi. Many young chefs neglect this. But I focus on the customer's meal. That's why it's not possible and it's hard. In that sense, what I present to these friends is that if we put our heart first on these things and do our best in what we eat, we can do other things well.'
